Description

Welcome to Bodegas Tio Pepe ! At your chosen time, we'll meet at this well-established winery, which has become a symbol of Jerez de la Frontera .

Kicking off our guided tour of the winery , we'll enter the cellars and begin a journey through time that will take us back to the end of the 19th century. More than 180 years have passed since Manuel María González Ángel decided to dedicate himself to the wine business, developing a product that would become one of the most emblematic drinks in Andalusia . 

During the tour, we'll walk among the vineyards, visit old courtyards and learn all about the ageing and maturing processes of Jerez wines and brandies . You'll discover curious facts about the winery as we explore. Did you know that the Spanish royals visited the complex?

To round off the tour, we'll enjoy a wine tasting . Accompanied by a wine technician, we'll learn how to distinguish the different nuances of the drinks. 

After an hour and a half visit, we'll say goodbye outside Bodega Tío Pepe.

Wine Tasting

When booking, you'll have the choice of two options: a tour that includes a tasting of 2 glasses of wine, or a tour with a tasting of 4 glasses and 2 tapas. It's up to you!

By the early 19th century Jerez had become the wine capital of the world. In 1835, Manuel Mª González Angel put all of his savings into the founding of a small winery and within 20 years González Byass grew to become the leading exporter of sherry wines in Jerez.

The first bodegas (storage houses where sherry is aged and matured) were built at this time: La Constancia, Los Apóstoles and La Cuadrada. By mid-century, others followed, including La Concha designed by Gustav Eiffel and the Lepanto bodega.

By the time of his death in 1887, Manuel Mª González Ángel had not only built up a flourishing business but also created a unique architectural legacy.

A visit to the González Byass Tío Pepe winery in Jerez will transport you back in time to Jerez in the 19th century, although a fine glass of Tío Pepe sherry will soon bring you back to the present.

A guided tour of the Bodegas Tio Pepe

Tio Pepe, a renowned sherry producer, offers a wide range of sherry varieties that represent different flavor profiles and production styles. In Jerez, you have the opportunity to take part in a guided tour followed by a tasting at Bodegas Tio Pepe.

Tio Pepe is known worldwide for its sherry and so it is not surprising that tour groups and numerous individual visitors take part in the guided tours and tastings here several days a week. During our time in Jerez, we spontaneously decided to gain our first experience of sherry here. Out of season, it was possible to buy tickets shortly before the start of the German-speaking tour. In the high season, it is better to do this a little earlier as places are limited.

Our guide picked us and the 10 or so other German-speaking visitors up in a “waiting room” directly behind the ticket office. Tours in other languages also started here at the same time

We first went to a covered area that reminded me more of a riding arena. The bodega of La Concha was built in honor of the Spanish Queen Isabella II. The famous French engineer Gustave Eiffel designed this hall. There are 206 barrels of Amontillado La Concha stored here. Almost every barrel is marked with a flag to indicate the countries in which Tio Pepe sherry is sold. This is where we received our first information about sherry.

The history of sherry

Sherry is a world-famous wine that originated in the Andalusia region in south-western Spain. The center of the sherry region is in Jerez de la Frontera. The history of sherry can be traced back to the time of the Phoenicians, who arrived in the region around 1100 BC and planted the first vines.

However, the actual development of sherry as we know it today began during the Moorish period (8th to 15th century). Although the consumption of alcohol is forbidden in Islam, the Moors allowed the local Christians and Jews to make wine. The name “Sherry” is derived from the Arabic name “Sherish” for Jerez.

In the 15th century, after the Reconquista, sherry began to be exported to England and other parts of Europe, which developed a taste for this wine. This was the catalyst for a significant expansion of the sherry industry in the region.

In modern times, sherry remains an important part of Spanish culture and cuisine, known for its versatility and ability to complement a wide range of dishes. Sherry is not just a drink, but a symbol of the history and tradition of southern Spain.

Production of sherry

Our tour took us to museum equipment and tools that are important for the production of sherry. Here, and later in the huge warehouses of Tio Pepe, we were given an explanation of the production process.

The process of making sherry is a fascinating one. The producers have perfected it over many years. I have tried to give a simplified description of this process here, as I understood it during the tour:

It all starts with selecting the right grapes. Sherry is only made from three white grape varieties (Palomino, Pedro Ximénez, Moscatel). These grapes are grown in the Andalusia region in the southwest of Spain and are usually harvested at the end of September.

After the harvest, the grapes are pressed to extract the juice. The juice is then stored in large tanks, where it begins to ferment. During this process, yeasts convert the sugar into alcohol. This process takes around one to two weeks. After fermentation, the wine is divided into different categories depending on its taste and alcohol content. The young wine is then placed in oak barrels, where it undergoes its first maturation process.

The key to the production of sherry is the solera process. This is a complex system of continuous blending of different vintages. The barrels are stacked on top of each other in rows. The oldest wines are in the lowest row (solera), while the younger wines are stored in the upper rows. A portion of the wine (maximum 1/3) from the lower barrels is drawn off and bottled. This portion is then replaced with wine from the row of barrels above. This is then topped up with the wine from the top row of barrels. This results in a constant blending of the wines.

What types of sherry are there?

Even before we went to the tasting later, the guide tried to explain the different types of sherry and flavors to us. I found this a little difficult because I couldn’t even imagine the taste at the time, as I hadn’t drunk sherry before.

Sherry is a versatile wine with different styles that vary in taste, color and production process. There are different types of sherry, from dry to sweet, including Fino, Amontillado, Oloroso, Pedro Ximénez and Cream Sherry.

  • Fino: A very dry, light-colored and light sherry. It matures under a layer of yeast, known as flor, which gives it a characteristic, fresh and sometimes slightly nutty taste.
  • Amontillado: This sherry begins as a fino, but later loses the flor, resulting in a slight oxidation. It is darker than Fino, has a richer, nuttier taste and is dry to medium-dry.
  • Oloroso: A dark, full-bodied sherry that matures without the flor, which leads to stronger oxidation. It has intense aromas of nuts, wood and dried fruit and is usually dry, although it can also be sweet.
  • Pedro Ximénez (PX): A very sweet, dark sherry made from the Pedro Ximénez grape. The grapes are left to dry in the sun after harvesting to concentrate the sugar content. PX is syrupy with aromas of dried fruit such as raisins and prunes.
  • Cream Sherry: A sweeter type of sherry, often made by blending Oloroso or Amontillado with sweet Pedro Ximénez or Moscatel sherry. It has a rich, smooth profile.
  • Moscatel: A sweet sherry made from the Muscat grape. Similar to Pedro Ximénez, the grapes are dried to concentrate the sugar. Moscatel has intense aromas of honey and nutmeg.

The heart of Tio Pepe are the bodegas. The tour takes you through the historic cellars, where we were able to see the countless rows of barrels. The large warehouses are something very special. Large windows ensure sufficient air circulation and a relatively constant temperature. There is a slight smell of alcohol in the air everywhere.

As we walk along the rows of barrels, we also discover the “celebrity barrels”. Here, for example, prominent athletes such as Formula 1 drivers Alonso and Senna have left their autographs during their visit. But I also discover barrels from Holywood greats such as Spielberg and Orsen Wells.

Bodegas Tio Pepe is particularly proud of its royal barrels, which have been used to store sherry for many years.

There is a charming story about a mouse in the wine cellars of Tio Pepe. According to this story, a cellar worker once decided to enrich the lives of the little mice that lived under the barrels. He did this by giving them some of the sherry production. To do this, he placed a small sherry jar, filled to the brim, on the floor and placed a tiny ladder on it, the top of which was flush with the edge of the jar. This made it easy for the mice to reach the sherry. Although we didn’t spot any mice feasting on the sherry during our visit, there are pictures nearby showing some of the happy mice enjoying a sip.

The highlight of the tour was, of course, the tasting. This takes place in a former warehouse that has been converted so that the groups can always sit together in small areas.

We had opted for the tasting of 2 different sherries. Our guide briefly said something about the samples and then disappeared again to accompany the next tour. At this point at the latest, it was very clear that the groups had actually just been “passed through”.

First we tried the Fino Sherry from Tio Pepe. It is described as very dry, light and elegant. The sherry is made from 100% Palomino Fino grapes and matures for at least 4 years in American oak barrels. I found it so-so, with little flavor and little statement.

We were then served a Croft Twist. It is a refreshing drink with a light sherry note, combined with natural and fresh ingredients such as elderflower, lemon and mint. It reminded me a lot of a Hugo. It tasted good, but didn’t have much to do with the actual sherry.

Finally, we had the opportunity to browse through the souvenir store, where you could buy sherry and other local products.

Was the visit worth it?

I have to admit that I would have answered yes to the question immediately after the visit. However, as we took part in a total of 3 tours in different bodegas during our time in Jerez, the picture is different in hindsight.

The tour itself was very impersonal, stiff and told “down”. Questions were answered, but you quickly realized that they didn’t belong in the text we had learned about the tour. Perhaps it was due to the language and the guide might have been more interesting in Spanish. In terms of content, the tour was great and a good introduction for a sherry novice.

During the tasting, we received two samples compared to one of the other tours, which were similarly priced. On the other tour there were 4 different sherry samples. So if you want to try more, you don’t necessarily have to pay more!

Compared to all the other tours, Tio Pepe was the worst in our eyes.

Planning a trip to Jerez de la Frontera

Jerez de la Frontera is a city in the south of Spain near Seville (despite it belonging to the province of Cadiz) that every sherry lover should plan on visitin g at least once. A trip to Jerez de la Frontera takes less than one hour from Seville. You can get to Jerez by car, train or join a day tour from Seville (a great option but tours do not run every day)

Even if sherry is not your particular favorite wine, it is very rare that one leaves Jerez without falling a little bit in love with this city. And once you visit a sherry winery and learn about the fascinating way it is made, your feelings for sherry wine will grow as well. How long should I plan my stay in Jerez?

The number of days you should spend in Jerez de la Frontera depends on the length of your trip and the other cities you plan on visiting. Although a smaller city, there is plenty to see and there are convenient day trips from Jerez de la Frontera as well. One day is enough to enjoy the most important highlights. With 2 to 3 days in Jerez, you will have time to get to know the city well and visit the neighboring cities of Puerto de Santa María, San Lucar de Barrameda or Cadiz which are easily accessible. Don’t have time to stay one night or more? Not to worry. A day trip to Jerez from Seville, for example, is a nice introduction to the city. You could also opt to take the train from Seville to Jerez de la Frontera from Seville and plan your day with a walking tour, a winery visit, and if possible arrange for a visit to the horse show . 

When should I go to Jerez de la Frontera?

The hottest months in Jerez de la Frontera are July and August, therefore these best be avoided if possible. The best times of year to visit are probably late spring and early fall when the temperatures are less extreme in the south of Spain.

You may want to consider going during one of Jerez’s popular festivals such as the Jerez Flamenco Festival in February, the Jerez Horse Fair in May , or the Jerez Sherry Festival in September that celebrates the grape harvest. Plan these trips well in advance as hotels tend to get booked for these festivals.

Which wineries should I visit?

Although these are not the best times for the demand of sherry wine and many wineries have seen their doors close in the past years, you will still be able to find a good number of wineries in Jerez. We strongly recommend you book in advance, especially if you plan to do winery visits in English. The Tio Pepe winery visit is the most obvious choice (and a great overall experience)

How do I get to Jerez de la Frontera?

Jerez de la Frontera is easily accessible by different means of transportation. Jerez has an airport at less than 20 minutes from the city center. Ryanair even has flights available through London, Barcelona, and Frankfurt.

The train service is excellent in this part of Spain. Jerez is just a one hour train ride from Seville and connects easily with nearby cities you may want to visit. A less than 10-minute train ride will get you to the beach and El Puerto de Santa María.

Driving in Spain is always a good option, but it is not always necessary and especially in Jerez.

Gonzalez Byass Sherry

González Byass was created in 1835 by Manuel Maria González and remains in family hands today, now in the fifth and sixth generation.  Founded in Jerez de la Frontera, Andalusia, in the heart of Sherry country, it is dedicated to the production of high-quality sherries.

The Sherry triangle, made up of Jerez de la Frontera, El Puerto de Santa Maria and Sanlucar de Barrameda, has a unique microclimate influenced by the surrounding Atlantic Ocean and Guadalquivir and Guadalete rivers. Production is dominated by the Palomino variety, and vines are planted in the white Albariza soil, with high chalk content which is excellent for retaining moisture.  These soil conditions, combined with over 3,000 hours of annual sunshine, fresh, humid breezes from the west (poniente) and warm, dry breezes from the east (levante) have formed the perfect marriage with the Palomino variety to produce an array of sherry styles.

All sherries are aged following the traditional Solera system where the wines are blended in 600 litre American oak casks. Many styles are produced with distinctive characters depending on whether they have been aged under the influence of the flor (a layer of natural yeast) or as an oloroso (in contact with oxygen).

Today the portfolio includes a wide range of sherries including Tio Pepe, the Superior Range and the VORS range, enological gems aged for over 30 years.

Sherry might be Spain’s worst-kept secret.

It’s not one of those secret wine gems that only the trendiest sommeliers know about (looking at you, Georgian wine). But I’ll admit, when most people think of sherry, they think of their granny.

Tiny glasses of sickly sweet, treacly booze… that’s the image most people have of sherry wines.

But what those people don’t know is that the good stuff is a secret. Sherry wines are some of the best in Spain, and some of my favourite wines in the world! And the best sherries come from Jerez de la Frontera.

This sleepy town is quintessentially Spanish. It’s got tapas, flamenco, siesta, and of course, vino . So if you’re visiting Jerez, why not check out some of the best bodegas in town? These wineries are the perfect place to get to know Spain’s best-kept wines.

What is Sherry Wine?

“Sherry” doesn’t refer to a particular grape (or the name of the woman who makes it). No. Sherry is a place . In Spanish, it’s Jerez—a triangle of wine-making land between three towns in Andalusia. And the largest and most important of those towns is Jerez de la Frontera ; the ancestral home of sherry wines!

Ask most winemakers, and they’ll say their wine is made in the vineyard. But the magic of sherry takes place in the winery! These are the great resting places of the vinos de jerez , where the wine ages in barrels for years before release.

The wineries smell of old barrels, old wine, and the earth beneath your feet. (The floor is covered in soil and sand to keep the humidity high). Here, the sherries are mixed and raised under the watchful gaze of the cellarmaster, in a complicated system called “fractional blending”; of blending old wine with new, year after year.

The 7 Best Sherry Wineries in Jerez

González Byass

If you’re new to sherry wines, González Byass is not a bad place to start your journey. This is the producer of arguably the most famous wine of the region: the iconic Tío Pepe .

There are multiple tours every day, run by slick tour guides. It’s a well-polished machine, but a bit too on-rails for my liking. But the wines are good, and the tour is a good intro to sherry. I’d just recommend heading to another, smaller winery afterwards to get a more intimate experience!

Tours start at 16€, in English and Spanish.

  • Bodegas Gonzalez Byass: Calle Puerto, 19.

Bodegas Lustau

Lustau is one of my favourite sherry bodegas in Jerez. The wines are exceptional, and the vermouth is delicious! (Almost as good as my homemade vermouth ). Luckily, you get to try both on the tour of the winery!

It’s also a beautiful winery: over 100 years old and counting. The tour snakes through the cathedral-like barrel rooms, with tastings as you go.

Tours are in English and Spanish, starting at 18€ for the basic tour and tasting.

  • Bodegas Lustau: Calle Arcos, 53.

Bodegas Díez Mérito

You’ll likely be the only ones on the tour at Díez Mérito . It’s not that the wines are bad, in my opinion they’re the most delicious in Jerez! It’s just that it’s fairly off the beaten path.

This is an 18th-century winery, with gorgeous architecture and orange tree patios. You’ll taste a variety of the bodega’s premium sherries, and get a personal tour from a family member or family-friend!

Tours are available in English and Spanish, starting at 12€ per person.

  • Bodegas Diez Merito: Calle Diego Fernández Herrera, 10.

Bodegas Tradición

As the name implies, Tradición is one of the oldest and most traditional sherry bodega s in Jerez. In fact, it goes all the way back to 1650! That’s old .

In keeping with traditional themes, there’s not much modern wine-making technology here. No modern additives sourced from a lab, no high-tech stabilisation… as close to 17th century sherry as possible!

Tours are in Spanish, English, and German, for 35€ per person. It’s more expensive than the other bodegas on this list, but you get to try much older wines from their collection. You also get a guided tour of their extensive art collection thrown in!

  • Bodegas Tradición : Calle Cordobeses, 3.

Bodegas Fundador

Since 1730, Fundador has been producing some of the most sought-after sherries in Jerez. The winery complex itself is the oldest in town, so it’s worth the visit just to get a close-up look at the architecture.

Tours are in English and Spanish. Tastings alone start at 9€, with tours + tastings from 10€. If you’re into this sort of thong, you van also do a chocolate and sherry pairing! (P.X. sherry and chocolate is one of the world’s greatest pairings, just try it).

Bodegas Álvaro Domecq

Álvaro Domecq is a quality bodega , if a little less famous than the others. The Domecq name, however, is very famous in Jerez! This family has been involved with sherry for 300 years—as winemakers, landowners, and aristocrats. ( Infamous might be a better description, given the family’s odd and at times problematic history !).

Following in his family’s footsteps, Alvaro opened his bodega in the 1990s, taking over a 18th-century winery.

Tours are in English and Spanish, prices are subject to group size.

Bodegas Dios Baco

With origins dating back to the 1730s, Dios Baco is another winery with a hell of a history! The Morilla family has owned this bodega since 1992, and chances are if you take a tour, one of the family will be leading you through the barrel rooms.

Tours are organised by emailing with the winery. When I visited, I did a tour for 18€ per person (including some generous light tapas).

A shining example of the winemaking tradition of the 19th century, Bodegas Tío Pepe is a spectacular winery located right in the historic centre of Jerez . Explore its breathtaking Andalusian courtyards, trellis-lined streets and incredible wine cellars , over a hundred years old, where the finest sherry wines and brandies are aged.

A living history of wine and brandy from Jerez

In  1835 , a young man named Manuel María González Ángel  acquired his first winery , with a strong desire to produce sherry wines. Just five years later he expanded the facilities to include the winemaking centre known as La Constancia. Today you can wander between the houses, streets, vineyards and wine cellars that comprise Bodegas Tío Pepe and taste the fruits of more than 180 years of experience . Will you join us?

Built in honour of Queen Isabella II of Spain, this wine cellar’s  unique and revolutionary architecture  was designed by the famous French engineer Gustave Eiffel. It houses 206 butts of La Concha Amontillado. 

Villa Victorina

These 2,900 m2 of gardens are home to the first grass tennis court i n Spain and over 500 trees and plants of 40 different species, including many of South American origin. 

Viña y bodega San Manuel

Enjoy 8,500 m2 of space dedicated to  creating and aging our Brandy de Jerez. 

Bodega Lepanto

Our  oldest brandy wine cellars , where the Solera Gran Reserva Lepanto brandy is aged. The enchanting central cobblestone courtyard is surrounded by arches draped in vines. 

Tonelería

The cooperage workshop is where the butts that will later house the finest sherry wines and brandies are repaired.

This site was designed by the famous engineer Don Eduardo Torroja and can hold up to  15 million litres of Tío Pepe. 

Bodega La Cuadrada

This mid-19th century ‘square’ wine cellar has 4,400 m2 of space, holding  4,000 butts  for the aging of sherry wines.

A gorgeous wine cellar, housing butts that are more than 300 years old .

‘Consistency’ was Don Manuel María González’s motto, and the name he gave to his first winemaking centre. Here, you can admire the traditional architecture of wine cellars in Jerez.
