In 1811, the Western Cape saw its inaugural hunt with hounds from Gloucestershire, UK, establishing the Cape Hunt as the oldest in the New World. While searching for a cellar site, Rollo, the proprietor, stumbled upon the original kennel foundations, a fitting location for our new build.

Roving Sommelier is passionate about premium quality regional South African wines. Journey’s End is a Gabb Family cellar cradled in the foothills of the Hottentot Mountains, overlooking stunning False Bay. Here lies a winelands paradise blessed with great views, a great climate and an abundance of indigenous bird and plant life.

The Huntsman bears reference to the original Cape Hunt that was founded in 1822. With hounds imported from Gloucestershire, England, it has the distinction of being the oldest New World Hunt today. The site where the original kennels stood sits at Journey’s End and is where in 2010, we laid the foundations and subsequently built our family’s winery.

Handpicked, these three varietals were individually fermented using a combination of traditional and modern methods – a happy marriage between Old and New World winemaking techniques. The traditionally made components structure, grip, and backbone to the palate while carbonic ferments adds complexity, candied fruit and floral aromatics whilst softening the palate too.

Delicious as is either on its own or with food, and in a convivial atmosphere.

The Journeys End The Huntsman Blend 2018 is full-bodied, smooth and has luscious expression of aromatic violets, redcurrants and cherries with a hint of white pepper and liquorice. 

The Journeys End The Huntsman Blend is blended together from Shiraz, Mouvedre and Viognier. This red blend has a juicy layered palate of red and dark berries, a balanced oak structure and elegant tannins.

The grapes were handpicked. 70% of the Shiraz and 100% of the Mourvedre and Grenache underwent traditional fermentations where grapes were hand sorted and destemmed before being inoculated and fermented. The traditional fermentations took about 15 days to complete at 20 – 25 ̊C in automated rotational tanks which submerge the skins using a very gentle action (ensuring soft tannins). 30% of the Shiraz was subjected to a carbonic fermentation method producing a completely different flavour profile adding complexity to the eventual blend. Malolactic fermentation of all varieties took place in large format barrels and the wine was left to mature for a further 12 months before being blended, fined and filtered. This wine is vegan friendly.

Expressive aromatics of violets, raspberry, and candy floss with hints of cinnamon spice. Juicy layers of red and dark berries break through on the palate accompanied by soft powdery tannins. An unintrusive, easy drinking Summer red that is to be seriously enjoyed but not taken too seriously – cool down slightly for the ultimate Summer braai/barbeque red. Drink now and until 2026.

Fillet With Peppercorn Sauce Paired With Journey’s End The Huntsman Shiraz Mourvèdre Grenache

Mike’s comments on The Huntsman pairing with his Fillet with Peppercorn Sauce recipe “Our Rhône-styled red blend is predominantly driven by Shiraz, which brings with it an ever-evident white pepper spice. The blend is rounded by Mourvèdre (which adds a nice savoury character) and Grenache (which brings beautiful red fruit to the blend). This wine perfectly complements a beautiful rich red meat dish on a cold winter’s day and is also a perfect choice for a casual hot summer’s day when chilled down to 14 degrees. It certainly won’t disappoint. It is a wine to be enjoyed on all occasions!”

Fillet With Peppercorn Sauce Recipe

Ingredients:.

?1 tbsp vegetable oil ?25g clarified butter ?2 fillet steaks (ideally beef matured for 3-5 weeks), about 140g/5oz each, at room temperature ?A knob of butter ?2 large shallots, finely chopped (from my garden) ?6 medium mushrooms, sliced (from my garden) ?2 tsp green and pink peppercorns, crushed (from my garden) ?3 tbsp brandy ?100ml Journey’s End “The Huntsman” (We use a bit more than that) ?200ml good-quality beef stock ?3 tbsp double cream

• Heat a frying pan over a medium-to-high heat, then pour in the oil and the clarified butter. Add the steaks, season them with salt and plenty of freshly ground black pepper and cook to your liking (2 mins each side for medium-rare, 3 mins each side for medium, depending on the thickness of your steaks). Be sure to seal the rounded edges, too. Transfer to a plate.
• Add the knob of butter to the pan, then fry the shallots, mushrooms, and peppercorns over a medium heat for 5 mins, until the shallots have softened, and the mushrooms have browned. Return the steaks to the pan. Heat the brandy in a metal ladle, light with a match then carefully pour into the hot pan, standing as far back as you can. Once the pan has stopped flaming, remove the steaks again.
• Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. This will take about 5 mins. Add the stock and reduce again, this time by two-thirds. Stir the cream into the sauce and allow it to thicken slightly. Check the sauce for seasoning, then return the fillets to the pan to warm through, spooning the sauce over. Serve straight away.

The red grapes were handpicked in the morning and stored overnight in the cold room. 70% of the Shiraz and all of the Mourvedre underwent traditional fermentation where it was subsequently hand sorted and destemmed before being inoculated and fermented. The Shiraz and Mourvedre fermentations took about 15 days to complete at 20 – 25˚C in automated rotational tanks which submerge the skins using a very gentle action (ensuring soft tannins).

The Mourvedre was racked off the skins at 8° balling and underwent the latter stage of fermentation in 500L barrels. The remaining 30% of Shiraz was subjected to a carbonic fermentation. Malolactic fermentation of both red varieties took place in barrels and the wine was left to mature for a further 12 months before being blended.

The 2019 Viognier was vinified separately and added to the blend which was then fined and stabilized in preparation for bottling. We fine the wine with bentonite which means our wine is vegan friendly.

Beautiful dark ruby red colour. Expressive aromatics of violets, redcurrant and cherries with hints of white pepper and liquorice. Juicy layers of red and dark berries come through on the palate, with elegant tannins on the finish. Drink now and until 2023.
