Romain Paillereau's cuisine is built around honest, natural flavors supported by the savoir-faire of French gastronomy. At Pinte des Mossettes, the chef drew inspiration from ingredients found within reach of a picking basket.

At the Restaurant des Trois Tours, Romain Paillereau creates cuisine with strong characteristics: explosive flavors, subtle nuances and freshness. Over time, close relationships have developed with like-minded producers, and the chef is keen to continue this valuable collaboration at Bourguillon.

Des Trois Tours

Alain Bächler hat die elegante Auberge mit dem prächtigen Garten berühmt gemacht, Romain Paillereau hält sie weiterhin an der Spitze der Freiburger Gastronomie. Der Chef aus dem Bordelais hat bei Anne-Sophie Pic und Michel Troisgros gearbeitet und von der legendären, abgelegenen «Pinte des Mossettes» in den Freiburger Vorort gewechselt. Das spürt man: Terroir-Produkte und selbst gesammelte Kräuter spielen bei den handwerklich perfekt gemachten, wunderschönen Gerichten immer noch eine wichtige Rolle. Angeboten wird ein monatlich wechselndes Menü mit vier bis sechs Gängen, auf Wunsch mit Weinbegleitung.

Der Chef selbst servierte die fabelhaften Amuse-bouches: eine im Rauch unter der Cloche präsentierte Sandwich-Neuinterpretation mit Meringue-Brot, geräuchertem Schinken und Greyerzer Käse. Eine Pilzvelouté mit Zitronenöl und Kreuzkümmel. Gedörrte Poulethaut mit Zitronenzesten. Und einen kleinen Gugelhopf mit Chämi-Schinken sowie Butter mit schwarzem Knoblauch. Ein Gedicht waren zum Start die rohen, blauen Crevetten mit einem Shiso-Blatt an Stangensellerie- und Liebstöckelemulsionen sowie mit einem Krustentier-Zitronen-Jus; dazu gab’s ein bezauberndes Stangenselleriesorbet auf Crevetten-Panna-cotta – zum Glück wurde zu jedem Gang anderes Brot serviert, um die Saucen aufzutunken.

Dann kombinierte Paillereau eine Kartoffel überzeugend mit Sauce gribiche, einem Crémeux vom Hering und Minzöl. Das mit Kräutern aromatisierte Heilbuttfilet kam auf Gurken und Austern sowie mit einem Tapiokasoufflé auf den Tisch; den eleganten Gang veredelte man selbst mit separat serviertem Tarama-beziehungsweise Fischrogenschaum und Sprossen. Im Hauptgang war «Surf and Turf» angesagt: zum einen ein gegarter Kaninchenrücken in Kräuterkruste auf Langustinenöl, zum anderen ein mit Kaninchenhack gefüllter, südfranzösischer Barbajuan (frittierter Raviolo), perfekt ergänzt mit einer erfrischenden Komposition von Fenchel, Anis und Basilikum.

Nach dem exzellent bestückten Käsewagen sorgten Milchreis mit Combavazesten und -püree, ein Mandelbiskuit sowie Kokosnuss-Tuiles und -sorbet für den himmlischen Schluss. Hervorragende Weinkarte mit Crus aus der Schweiz und ihren Nachbarländern.

The cuisine of Alain Baechler is both a smart and delicious and the sommelier offers always very good advice on wine. Everything happens for a simple and elegant atmosphere and with prices remaining relatively mild for the services provided. This restaurant is mentioned in the Gault Millau French gastronomic guide and awarded one star by the Michelin guide.
